I have now made a more authentic version of DAL MAKHANI using Urad Dal and this version is just as delicious as my previous dish (SORT OF) DAL MAKHANI using French style lentils.
There isn't a huge difference between the two, which is not surprising as both types of lentils are known for their earthy taste. Texture wise, the French style lentils hold their shape better than Urad Dal, once cooked. Whether that is a good thing or not is down to personal taste.
Usually DAL MAKHANI is made with both butter and cream and I used both in my first attempts at this dish. I then tried using no butter, but doubling up on the cream and I found that both versions were as rich as each other. However, as butter has more than twice the calories compared to the low fat cream I used, I have decided to go with the cream only version for publication on the recipe pages. I would love for you to try both versions yourself and let me know what you think.
This is a very spicy dish, so I suggest that you don't make the mistake I made , which was to serve it with a spicy side dish. There was nowhere to seek refuge!! Next time I will serve it with CAULIFLOWER RICE and RAITA. And there definitely will be a next time as this has become my absolutely favourite ever vegetarian dish.
